Hi Nick,

You can use a 1" (25mm) diameter solid metal bar for the rear axle.
This is what I used on my first karts, and it worked very well.

Take a look at the following plans (which use a lawnmower engine). 
Although the chassis is made from wood, a solid metal axle is used. You 
can use a similar method to mounting and using a solid rear axle.
